Tomato Spinach Chicken Spaghetti

A light Mediterranean-style chicken and pasta skillet with sun-dried tomatoes, fresh tomatoes, garlic and wilted spinach — healthy, dairy-free, no cream and no cheese.

  • 8 ounces spaghetti (or preferred pasta)
  • 1/3 cup sun-dried tomatoes, chopped (drained if packed in oil)
  • 2 tablespoons olive oil (from sun-dried tomato jar reserved, if available)
  • 1 pound boneless skinless chicken (breast or thighs), cut into 1/2–inch pieces
  • 1/4 teaspoon salt, plus more to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 Roma tomatoes, chopped (or about 2 cups chopped tomatoes)
  • 1/4 cup fresh basil leaves, chopped
  • 8 ounces fresh spinach (about 4 cups packed)
  • 3 garlic cloves, minced
  • 3 tablespoons additional olive oil (high-quality), for finishing
  • Freshly ground black pepper, to taste

Instructions

  1. Cook the spaghetti according to package directions until al dente; drain and set aside.
  2. Heat 2 tablespoons olive oil (reserved from sun-dried tomatoes if using) in a large skillet over medium heat and add the chopped sun-dried tomatoes.
  3. Add the diced chicken, 1/4 teaspoon salt, red pepper flakes and freshly ground black pepper; cook, stirring, until the chicken is cooked through and no longer pink, about 5 minutes.
  4. Add the chopped Roma tomatoes, chopped basil, minced garlic and fresh spinach to the skillet; cook about 3–5 minutes, stirring, until the spinach wilts and tomatoes release some juices.
  5. Remove the skillet from heat, taste and adjust seasoning with salt and pepper as needed.
  6. Add the drained cooked spaghetti to the skillet and toss to combine; reheat briefly on low if needed to warm the pasta through.
  7. Drizzle up to 3 tablespoons high-quality olive oil over the finished pasta and toss; serve immediately.

Notes

1) Use pasta water splash (1–2 tablespoons) if mixture seems dry to help the juices coat the spaghetti. 2) Substitute penne or rotini if you prefer short pasta. 3) To make it extra quick, use leftover cooked chicken or rotisserie chicken.
