Mediterranean Pasta with Feta Cheese, Spinach, Garlic, and Cherry Tomatoes

A quick 30-minute meatless pasta dish featuring cherry tomatoes, fresh spinach, garlic, and feta cheese, cooked on the stovetop for vibrant Mediterranean flavors.

  • 10 oz farfalle bow-tie pasta
  • 1 tablespoon olive oil
  • 8 oz grape tomatoes (red and yellow), sliced in half
  • 5 cloves garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon paprika
  • ½ teaspoon Italian seasoning
  • 5 oz fresh spinach, chopped
  • 6 oz crumbled feta cheese
  • 3 tablespoons freshly squeezed lemon juice

Instructions

  1. Cook 10 oz farfalle pasta in boiling salted water until al dente; drain and set aside.
  2. In a large high-sided skillet, heat 1 tablespoon olive oil over medium heat. Add halved grape tomatoes, minced garlic, ¼ teaspoon salt, ¼ teaspoon paprika, and ½ teaspoon Italian seasoning. Cook for 2 minutes until tomatoes soften and release juices.
  3. Stir in 5 oz chopped fresh spinach and cook until wilted. Add 6 oz crumbled feta cheese and stir to combine.
  4. Add cooked pasta to the skillet with 3 tablespoons lemon juice. Reheat on medium heat, stirring for 1 minute until combined. Add extra olive oil if desired.

Notes

This dish can be made ahead and refrigerated or frozen. For extra creaminess, reserve pasta water and add as needed. Garnish with fresh basil or chopped nuts for added texture.
