For the Crust:

  • 2 boneless, skinless chicken breasts, cubed
  • 2 medium zucchinis, sliced
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine chicken, zucchini, bell pepper, onion, garlic, olive oil, oregano, paprika, cumin, salt, and pepper. Toss to coat evenly.
  3. Transfer the mixture to a baking dish and spread evenly.
  4. Bake for 25-30 minutes until chicken is cooked through and vegetables are tender.
  5. Sprinkle with feta cheese and return to oven for 2-3 minutes until cheese softens.
  6. Garnish with fresh parsley before serving.
