  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup small pasta (such as orzo or ditalini)
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken breasts and cook until browned and cooked through, about 5-7 minutes per side. Remove chicken and set aside.
  3. In the same pot, add minced garlic and sun-dried tomatoes; sauté for 1-2 minutes until fragrant.
  4. Pour in chicken broth and bring to a boil.
  5. Add pasta and cook according to package instructions until al dente.
  6. While pasta cooks, shred the cooked chicken.
  7. Reduce heat to low and stir in heavy cream, Parmesan cheese, and shredded chicken.
  8. Add fresh spinach and cook until wilted, about 2 minutes.
  9. Season with salt and pepper to taste.
  10. Serve hot.
