Description
A rich and creamy soup inspired by the famous Marry Me Chicken, featuring tender chicken, sun-dried tomatoes, and herbs in a luxurious broth.

- 1 lb boneless, skinless chicken breasts, diced
- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced chicken and cook until no longer pink, about 5-7 minutes. Remove and set aside.
- In the same pot, add onion and garlic. Sauté until softened, about 3-4 minutes.
- Add sun-dried tomatoes, chicken broth, basil, oregano, salt, and pepper. Bring to a simmer.
- Return cooked chicken to the pot. Simmer for 10 minutes.
- Stir in heavy cream and Parmesan cheese. Cook for another 5 minutes until slightly thickened.
- Garnish with fresh parsley and serve warm.
