Maple-Dijon Roasted Sweet Potatoes

Caramelized and buttery roasted sweet potatoes glazed with maple syrup and Dijon mustard for a deliciously sweet and tangy flavor.

  • 3 large sweet potatoes, peeled and cut into 1-inch chunks
  • 2 tablespoons unsalted butter
  • 2 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In a large ovenproof skillet, melt the butter over medium-high heat.
  3. Once the butter is bubbly, whisk in the maple syrup and Dijon mustard until well combined.
  4. Add the sweet potatoes to the skillet and toss to coat them evenly with the maple-Dijon mixture.
  5. Season with salt and freshly ground black pepper.
  6. Transfer the skillet to the oven and roast for about 30-35 minutes, tossing once halfway through, until the sweet potatoes are tender and caramelized.
  7. Remove from oven and serve warm.

Notes

Use an ovenproof skillet to minimize cleanup and ensure even cooking. Toss the sweet potatoes halfway through roasting for consistent browning. Adjust maple syrup quantity for desired sweetness.
