Easy Maple Roasted Carrots

Simple yet satisfying maple roasted carrots that are naturally vegan and gluten free, featuring a sweet and salty glaze with optional heat and herbs.

  • 1 lb large carrots, sliced in half lengthways
  • 2 tablespoons pure dark maple syrup
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon cayenne pepper (optional)
  • Fresh rosemary sprigs (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (205°C).
  2. Slice whole carrots in half lengthways and place on a large baking sheet in a single layer.
  3. Mix olive oil and maple syrup in a small bowl and brush over the carrots.
  4. Sprinkle sea salt and cayenne pepper over the carrots. Optionally add rosemary sprigs between carrot halves.
  5. Bake in the oven for 25 minutes until carrots are tender, flipping once halfway through.
  6. Garnish with chopped fresh parsley and serve.

Notes

Use larger carrots to prevent shriveling during roasting. Dark maple syrup enhances flavor best. Optional cayenne adds a subtle heat, and fresh herbs like rosemary and parsley add aroma and color.
