For the Crust:
- 2 ripe mangoes, peeled and diced
- 1 cup heavy cream
- 1/2 cup sugar
- 1 packet unflavored gelatin
- 1/2 cup water
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Puree the mangoes in a blender until smooth.
- In a saucepan, heat the heavy cream and sugar over medium heat until sugar dissolves. Do not boil.
- Sprinkle gelatin over water and let it bloom for 5 minutes. Then heat gently until dissolved.
- Combine mango puree, cream mixture, gelatin, and vanilla extract. Mix well.
- Pour into serving dishes and refrigerate for at least 4 hours or until set.

You can customize the seasonings to taste.
