For the Crust:
- 8 large eggs
- 1/4 cup milk
- 1 tablespoon butter
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1 cup cooked breakfast sausage or bacon, crumbled
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Melt butter in a skillet over medium heat. Add bell peppers and onions, sauté until softened.
- Pour the egg mixture into the skillet and scramble until fully cooked.
- Stir in the cooked sausage or bacon and shredded cheese.
- Divide the mixture evenly among the tortillas, placing it in the center of each.
- Fold the sides of the tortillas inward, then roll tightly to form burritos.
- Wrap each burrito in foil or parchment paper and store in the refrigerator or freezer.
- To reheat, microwave for 1-2 minutes or bake at 350°F (175°C) for 10-15 minutes until heated through.
