Cheeseburger Macaroni Soup

A creamy, hearty soup that combines flavors of a cheeseburger with macaroni pasta and vegetables, perfect for a comforting meal.

  • 1 tablespoon olive oil
  • 2 lbs lean ground beef
  • 1 large yellow onion, diced
  • 1 tablespoon chopped garlic
  • ½ cup all purpose flour
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1½ teaspoons salt
  • 1½ teaspoons black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon Italian seasoning
  • ½ teaspoon paprika
  • 1 cup matchstick cut carrots
  • 1½ cups uncooked macaroni noodles
  • 3 cups shredded cheddar cheese
  • ⅓ cup shredded parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
  2. Add diced onion and chopped garlic to the beef and cook until onions are translucent.
  3. Sprinkle flour over the beef mixture and stir well, cooking for about 3 minutes to remove the raw flour taste.
  4. Slowly add chicken broth while stirring continuously until the mixture thickens.
  5. Add heavy cream and stir well.
  6. Season with salt, pepper, onion powder, Italian seasoning, and paprika. Stir to combine.
  7. Bring the soup to a boil, then add carrots and uncooked macaroni noodles.
  8. Reduce heat and simmer until the macaroni is tender, approximately 8-10 minutes.
  9. Stir in shredded cheddar and parmesan cheese until melted and smooth.
  10. Serve hot and enjoy.

Notes

Use matchstick carrots for quicker cooking and a nice texture. Shred your own cheese for best melting results. Adjust seasoning to taste, especially salt and pepper.
