Creamy, cheesy scalloped potatoes loaded with bacon, cheddar, and green onions for a hearty side dish.

For the Crust:

  • 4 large russet potatoes, thinly sliced
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 2 cups heavy cream
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Layer half of the sliced potatoes in the dish. Sprinkle with half the bacon, cheese, and green onions.
  3. Repeat with remaining potatoes, bacon, cheese, and green onions.
  4. In a bowl, whisk together heavy cream, garlic, salt, pepper, and paprika. Pour evenly over potatoes.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake another 15 minutes until golden and bubbly.
  6. Let rest 5 minutes before serving.
