For the Crust:
- 1 1/2 cups heavy whipping cream
- 8 oz mascarpone cheese
- 1/2 cup granulated sugar
- 1/4 cup lemon juice
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- 24 ladyfinger cookies
- 1 cup lemon curd
- Fresh mint leaves for garnish
Instructions
1. Prepare the Crust:
- In a large bowl, whip the heavy cream until stiff peaks form.
- In another bowl, mix mascarpone, sugar, lemon juice, lemon zest, and vanilla until smooth.
- Gently fold the whipped cream into the mascarpone mixture.
- Dip ladyfinger cookies briefly in lemon curd and layer them in a dish.
- Spread half the mascarpone mixture over the ladyfingers, then repeat layers.
- Refrigerate for at least 4 hours or overnight before serving.
- Garnish with fresh mint leaves before serving.
