A zesty twist on the classic Rice Krispie Treats with a refreshing lemon flavor.

For the Crust:

  • 6 cups Rice Krispies cereal
  • 4 cups mini marshmallows
  • 3 tablespoons unsalted butter
  • 2 tablespoons lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Grease a 9×13-inch baking dish and set aside.
  2. In a large pot, melt the butter over low heat. Add the marshmallows and stir until completely melted.
  3. Remove from heat and stir in the lemon zest, lemon juice, vanilla extract, and salt until well combined.
  4. Add the Rice Krispies cereal and gently fold until evenly coated with the marshmallow mixture.
  5. Press the mixture firmly into the prepared baking dish using a greased spatula or your hands.
  6. Allow to cool completely before cutting into squares.

Notes
