A zesty twist on the classic Rice Krispie Treats with a refreshing lemon flavor.

For the Crust:
- 6 cups Rice Krispies cereal
- 4 cups mini marshmallows
- 3 tablespoons unsalted butter
- 2 tablespoons lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
1. Prepare the Crust:
- Grease a 9×13-inch baking dish and set aside.
- In a large pot, melt the butter over low heat. Add the marshmallows and stir until completely melted.
- Remove from heat and stir in the lemon zest, lemon juice, vanilla extract, and salt until well combined.
- Add the Rice Krispies cereal and gently fold until evenly coated with the marshmallow mixture.
- Press the mixture firmly into the prepared baking dish using a greased spatula or your hands.
- Allow to cool completely before cutting into squares.
