For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled
- 1/4 cup ice water
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup fresh lemon juice
- 1 tbsp lemon zest
- 1/4 tsp salt
- 1 cup heavy cream (for topping)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Mix flour and butter until crumbly, then add ice water to form a dough. Press into a pie dish and bake for 15 minutes.
- Whisk together sugar, eggs, lemon juice, lemon zest, and salt. Pour into the pre-baked crust.
- Bake for 20 minutes or until the filling is set. Let cool completely.
- Top with whipped heavy cream before serving.
