Lemon Meringue Cookie Cups

Description

Delightful lemon-flavored cookie cups filled with creamy lemon curd and topped with fluffy meringue.


Ingredients

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1 tablespoon lemon zest
  • 1/2 cup lemon curd
  • 2 egg whites
  • 1/4 cup granulated sugar
  • 1/4 teaspoon cream of tartar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Lightly grease a mini muffin tin.
  2. In a bowl, mix flour, butter, powdered sugar, and lemon zest until a dough forms.
  3. Press dough into the muffin tin to form small cups. Bake for 12-15 minutes until lightly golden. Let cool.
  4. Fill each cookie cup with a teaspoon of lemon curd.
  5. In a clean bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add granulated sugar and beat until stiff peaks form.
  6. Pipe or spoon meringue onto each cookie cup. Broil for 1-2 minutes until meringue is lightly browned. Serve immediately.

Notes

You can customize the seasonings to taste.
