Ingredients

  • 🫒 1 tablespoon olive oil
  • 🧈 3 tablespoons butter, divided
  • 🐟 1 pound cod fillets, seasoned with salt and pepper
  • 🍅 1 pound cherry tomatoes, halved
  • 🧄 3 cloves garlic, finely chopped
  • 🌶️ A pinch of red pepper flakes
  • 🌱 3 green onions, whites and greens separated and sliced
  • 🍲 1/2 cup chicken broth (or white wine/dashi)
  • 🍋 2 tablespoons fresh lemon juice
  • 🧂 Salt and pepper to taste
  • 🌿 1 tablespoon fresh parsley, chopped
  • 🌿 1 tablespoon fresh basil, chopped

Instructions

Prepare the Cod:

  1. Heat olive oil and 2 tablespoons of butter in a skillet over medium heat. Cook the cod until golden, about 3-4 minutes per side. Remove and set aside.

Make the Tomato Sauce:

  1. Sauté tomatoes, garlic, red pepper flakes, and green onion whites until tomatoes are soft, about 2-3 minutes.

Deglaze and Simmer:

  1. Pour in chicken broth (or wine/dashi) to deglaze the pan. Add lemon juice and simmer to reduce slightly.

Finish the Sauce:

  1. Stir in the remaining butter until melted and the sauce thickens. Season with salt and pepper.

Combine and Garnish:

  1. Return cod to the skillet, spoon sauce over. Garnish with parsley, basil, and green onion greens before serving.
