Keto Fried Zucchini

A crispy, low-carb fried zucchini recipe using coconut flour or almond flour breading. This keto-friendly dish is perfect as a side or appetizer and can be served with ranch dressing for dipping.

Ingredients

  • 3 medium zucchini or yellow squash
  • 1 tablespoon salt
  • 2 large eggs
  • 1 tablespoon water
  • 1/3 cup coconut flour
  • 1/4 cup powdered Parmesan cheese
  • avocado oil for frying
  • Ranch dressing for serving

Instructions

  1. Beat together the egg and water in a shallow bowl
  2. Stir together the coconut flour and Parmesan in a second shallow bowl
  3. Coat the zucchini in the egg and then dredge in the coconut mixture to coat
  4. Add a single layer of zucchini to the hot oil, being careful not to crowd the pan
  5. Fry for 1-2 minutes on each side, until golden brown. Repeat with remaining zucchini
  6. Drain on a paper towel lined plate
  7. Sprinkle with salt if desired and serve with ranch dressing for dipping

Notes

Coconut flour gets crispier than almond flour, though both work well. You can substitute with equal parts all-purpose flour and panko breadcrumbs if not concerned about carbs. Use powdered Parmesan from a green can for best results. Consider adding garlic and onion powder to the breading for extra flavor.
