For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 (20 oz) can crushed pineapple, undrained
  • 1/2 cup vegetable oil
  • 1/2 cup chopped walnuts (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, and salt.
  3. Add eggs, vanilla extract, crushed pineapple (with juice), and vegetable oil. Mix until well combined.
  4. Fold in chopped walnuts if using.
  5. Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let cool completely before serving.
