For the Crust:
- 1 lb ground beef
- 1/2 lb ground pork sausage
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup mayonnaise
- 1/2 cup biscuit mix
- 2 eggs
- 1/4 cup milk
- 1 tsp chili powder
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large skillet, cook ground beef, sausage, onion, and bell pepper over medium heat until meat is browned and vegetables are tender. Drain excess fat.
- Stir in diced tomatoes with green chilies, chili powder, garlic powder, salt, and pepper. Simmer for 5 minutes.
- In a medium bowl, mix sour cream, cheddar cheese, Monterey Jack cheese, and mayonnaise. Set aside.
- In another bowl, whisk together biscuit mix, eggs, and milk to form a batter.
- Spread meat mixture evenly in the prepared baking dish. Spoon cheese mixture over the meat layer. Pour batter over the top.
- Bake for 30-35 minutes, or until the top is golden brown and set.
- Let cool for 5 minutes before serving.
