For the Crust:
1 lb ground beef
1/2 lb ground pork sausage
1 onion, chopped
1 green bell pepper, chopped
1 can (10 oz) diced tomatoes with green chilies
1 cup sour cream
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup mayonnaise
1/2 cup biscuit mix
2 eggs
1/4 cup milk
1 tsp chili powder
1/2 tsp garlic powder
Salt and pepper to taste
Instructions
1. Prepare the Crust:
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
In a large skillet, cook ground beef, sausage, onion, and bell pepper over medium heat until meat is browned and vegetables are tender. Drain excess fat.
Stir in diced tomatoes with green chilies, chili powder, garlic powder, salt, and pepper. Simmer for 5 minutes.
In a medium bowl, mix sour cream, cheddar cheese, Monterey Jack cheese, and mayonnaise. Set aside.
In another bowl, whisk together biscuit mix, eggs, and milk to form a batter.
Spread meat mixture evenly in the prepared baking dish. Spoon cheese mixture over the meat layer. Pour batter over the top.
Bake for 30-35 minutes, or until the top is golden brown and set.
