Jalapeño Peach Glazed Chicken Recipe

  • 1 lb boneless, skinless chicken breasts
  • 2 ripe peaches, diced
  • 2 medium jalapeños, chopped
  • 2 tbsp honey
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp lime juice
  • Salt and pepper, to taste

Instructions

  1. Rinse and pat dry chicken breasts. Dice peaches and chop jalapeños. Measure honey, soy sauce, and lime juice.
  2. In a saucepan, combine peaches, jalapeños, honey, soy sauce, and lime juice. Simmer for 10 minutes until peaches soften. Blend the mixture until smooth, then return to pan to thicken.
  3. Season chicken with salt and pepper. Grill over medium-high heat for 6 minutes per side, brushing with glaze during the last 2 minutes of cooking.
  4. Once chicken reaches 165°F internally, serve topped with extra glaze.
