Jalapeño Peach Glazed Chicken Recipe
- 1 lb boneless, skinless chicken breasts
- 2 ripe peaches, diced
- 2 medium jalapeños, chopped
- 2 tbsp honey
- 2 tbsp low-sodium soy sauce
- 1 tbsp lime juice
- Salt and pepper, to taste
- Rinse and pat dry chicken breasts. Dice peaches and chop jalapeños. Measure honey, soy sauce, and lime juice.
- In a saucepan, combine peaches, jalapeños, honey, soy sauce, and lime juice. Simmer for 10 minutes until peaches soften. Blend the mixture until smooth, then return to pan to thicken.
- Season chicken with salt and pepper. Grill over medium-high heat for 6 minutes per side, brushing with glaze during the last 2 minutes of cooking.
- Once chicken reaches 165°F internally, serve topped with extra glaze.
