For the Crust:
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 cup shredded cheddar cheese
- 2–3 jalapeños, seeded and finely diced
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C) and grease an 8-inch square baking pan.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, mix milk, oil, and egg until combined.
- Pour wet ingredients into dry ingredients and stir until just moistened. Fold in cheese and jalapeños.
- Spread batter into prepared pan and bake for 20-25 minutes, or until a toothpick inserted comes out clean.
