Irish Cream Caramel Cheesecake

A luscious cheesecake combining creamy Irish cream flavor with rich caramel drizzled on top, delivering pure indulgence in every bite.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1/2 cup Irish cream liqueur (e.g., Baileys)
  • 1 teaspoon vanilla extract
  • 1 cup caramel sauce, plus extra for drizzling

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  3. In a large bowl, beat cream cheese until smooth. Gradually add 1 cup sugar and beat until fluffy.
  4. Add eggs one at a time, beating just until combined after each addition.
  5. Mix in sour cream, heavy cream, Irish cream liqueur, and vanilla extract until smooth.
  6. Pour filling over crust in the springform pan.
  7. Bake for 55-65 minutes or until the center is almost set but still slightly jiggly.
  8. Turn off oven and leave cheesecake inside with the door slightly open for 1 hour.
  9. Remove cheesecake from oven and cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  10. Before serving, warm caramel sauce slightly and drizzle generously over the cheesecake.

Notes

For best results, use full-fat cream cheese and allow all dairy ingredients to come to room temperature before mixing. The resting period in the turned-off oven helps prevent cracks. Serve chilled with extra caramel drizzle for added indulgence.
