Instant Fruit Rabdi in Minutes! Custard Fruit Salad Recipe

A quick and easy dessert combining creamy custard with a variety of fresh fruits to create a delicious instant fruit rabdi or custard fruit salad perfect for any occasion.

  • 2 cups full-fat milk
  • 2 tablespoons custard powder
  • 4 tablespoons sugar
  • 1/2 teaspoon cardamom powder
  • 1/2 cup mixed fresh fruits (apple, banana, grapes, pomegranate seeds, mango, or any seasonal fruits)
  • 2 tablespoons chopped nuts (cashews, almonds, pistachios)
  • 1/2 teaspoon rose essence (optional)
  • Ice cubes or chilled milk (optional for serving)

Instructions

  1. Heat milk in a pan on medium flame until it starts boiling.
  2. In a small bowl, mix custard powder with 1/4 cup cold milk to form a smooth paste without lumps.
  3. Add sugar to the boiling milk and stir well.
  4. Reduce the flame and slowly add the custard paste to the boiling milk while continuously stirring to prevent lumps.
  5. Cook on low flame until the mixture thickens to a rabdi-like consistency, stirring frequently.
  6. Add cardamom powder and rose essence and mix well.
  7. Remove from heat and allow it to cool to room temperature.
  8. Once cooled, add chopped mixed fruits and nuts to the custard.
  9. Chill the fruit rabdi in the refrigerator for at least 1 hour before serving.
  10. Serve cold, optionally with ice cubes or chilled milk for extra freshness.

Notes

Adjust the sweetness according to your fruit choice and preference. Adding rose essence enhances aroma but is optional. Use seasonal fruits for best texture and flavor. For a richer taste, cook the rabdi longer to reduce it further before adding fruits.
