A quick and delicious Indian-inspired custard fruit salad that combines creamy rabdi-style custard with fresh mixed fruits for an instant, refreshing dessert.

  • 2 tablespoons sugar
  • 2 tablespoons custard powder
  • 1 cup mixed fresh fruits (apple, banana, grapes, pomegranate, orange segments)
  • 1/4 teaspoon cardamom powder

Instructions

  1. Bring the milk to a boil in a saucepan, then reduce the heat to low.
  2. Mix the custard powder with a little cold milk to make a smooth paste.
  3. Add sugar to the boiling milk, then slowly stir in the custard paste, stirring constantly to avoid lumps.
  4. Cook on low heat, stirring continuously until the custard thickens (about 5-7 minutes).
  5. Add cardamom powder and mix well; remove from heat.
  6. Allow the custard to cool slightly, then mix in the chopped fresh fruits.
  7. Chill the fruit custard in the refrigerator for at least 30 minutes before serving.
  8. Garnish with chopped nuts if desired and serve cold.
