Instant Fruit Rabdi in Minutes! Custard Fruit Salad Recipe

A quick and delicious custard fruit salad combining creamy rabdi with fresh fruits and custard, perfect for a refreshing dessert made in minutes.

  • 2 cups full cream milk
  • 3 tablespoons sugar
  • 1/2 teaspoon cardamom powder
  • 1 tablespoon condensed milk (optional)
  • 1/2 cup mixed fresh fruits (apple, banana, pomegranate, grapes, chikoo)
  • 1/2 cup custard powder
  • 2 cups cold milk (to prepare custard)
  • A handful of chopped nuts (almonds, pistachios) for garnishing
  • A few strands of saffron (optional)

Instructions

  1. In a pan, boil the full cream milk on medium flame, stirring continuously to avoid burning.
  2. When the milk reduces to half, add sugar, cardamom powder, and condensed milk; mix well.
  3. Simmer the thickened milk (rabdi) for 5 more minutes and then turn off the heat. Let it cool.
  4. Prepare custard by mixing custard powder with a little cold milk to make a smooth paste.
  5. Boil the remaining cold milk and gradually add the custard paste while stirring continuously to avoid lumps.
  6. Cook the custard on low flame till it thickens, then remove from heat and cool it completely.
  7. Chop the mixed fruits into small pieces and combine them in a large bowl.
  8. Add the cooled rabdi and custard to the fruits and mix gently until everything is well combined.
  9. Garnish with chopped nuts and saffron strands if using.
  10. Serve chilled immediately or refrigerate for 1-2 hours for enhanced flavor.

Notes

Use full cream milk for creamier rabdi and a richer taste. Fresh seasonal fruits add the best flavor and texture. This dessert can be made in advance and refrigerated before serving.
