Ice Cream Burfi

A soft and flavorful Indian milk-based sweet made with vanilla-flavored sugar, milk powder, ghee, and sugar syrup, garnished with nuts, offering a texture similar to traditional barfi but with hints of ice cream sweetness.

  • 3 tbsp sugar
  • 1 tsp vanilla extract
  • 4 cups milk powder
  • 1 cup ghee
  • 1 1/4 cup sugar
  • 1/2 cup water
  • 1/4 cup butter
  • Pistachios and almonds for garnish

Instructions

  1. In a mixer jar, combine sugar and vanilla extract and grind to a fine powder to make vanilla sugar. Set aside.
  2. In a large bowl, mix milk powder and ghee until well combined. Add vanilla sugar and mix well.
  3. In a large pan, combine sugar and water and stir until sugar dissolves completely.
  4. Boil the sugar syrup until it reaches 1 string consistency.
  5. Lower the flame and add the milk powder and ghee mixture to the sugar syrup, stirring continuously to combine.
  6. Add butter and continue stirring until the mixture becomes silky smooth and starts releasing ghee, and a small ball made from mixture is non-sticky and holds shape.
  7. Pour the mixture into a tray lined with baking paper, level it, and top with pistachios and almonds.
  8. Allow to cool for 2 hours or until set, then cut into pieces and serve.

Notes

Adding butter enhances the milky flavor and softness of the burfi. Using vanilla sugar adds extra aroma and sweetness. Store in the refrigerator for up to one week.
