For the Crust:
- 1 lb boneless, skinless chicken thighs
- 1/4 cup honey
- 1 tbsp hot sauce
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 cups cooked white rice
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup chopped cilantro
Instructions
1. Prepare the Crust:
- In a bowl, whisk together honey, hot sauce, garlic powder, paprika, salt, and black pepper.
- Heat olive oil in a skillet over medium-high heat. Add chicken thighs and cook for 5-6 minutes per side until fully cooked.
- Pour the honey mixture over the chicken and simmer for 2-3 minutes until the sauce thickens.
- Slice the cooked chicken into strips.
- Assemble bowls by dividing rice, chicken, avocado, cherry tomatoes, and cilantro among four servings.
- Drizzle any remaining sauce from the skillet over the bowls before serving.
