Honey Roasted Carrots

Sweet and savory carrots glazed with honey, perfect as a side dish.

Ingredients

  • 8 carrots
  • 3 tablespoons olive oil
  • 1/4 cup honey
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and chop the carrots into desired shapes.
  3. In a large bowl, whisk together olive oil, honey, salt, and pepper.
  4. Add the carrots to the bowl and toss to coat evenly.
  5. Spread the carrots on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for about 20-25 minutes, or until tender and caramelized.

Notes

For a more caramelized glaze, increase the oven temperature to broil for the last few minutes of cooking. Keep an eye on them to prevent burning.
