Perfect Homemade Pancakes

A simple recipe for fluffy and light homemade pancakes made with all-purpose flour, baking powder, baking soda, and buttermilk or milk, whisked with eggs and melted butter.

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk or buttermilk
  • 2 large eggs
  • 1/4 cup melted butter

Instructions

  1. In a large mixing bowl, sift together flour, sugar, baking powder, baking soda, and salt.
  2. Whisk in milk, eggs, and melted butter just until combined; do not overmix.
  3. Preheat a flat griddle or nonstick skillet over medium-high heat and grease if needed.
  4. Scoop 1/4 cup of pancake batter onto the griddle for each pancake.
  5. Cook until bubbles form and the edges look set, then flip carefully.
  6. Cook for another 1-2 minutes until golden brown and cooked through.
  7. Serve immediately with desired toppings.

Notes

1. Use buttermilk instead of regular milk for extra tang and fluffiness. 2. Do not overmix the batter; some lumps are fine to keep pancakes tender. 3. Preheat griddle well for even cooking and golden color.
