Homemade Mexican Pizza

Homemade Mexican Pizza is a layered Taco Bell copycat made with crispy flour tortillas, seasoned ground beef, refried beans, enchilada sauce, cheese, and fresh toppings like tomatoes and green onions.

  • 1 lb ground beef
  • 1 packet (1 oz) taco seasoning
  • 3/4 cup water
  • 16 small fajita-size flour tortillas
  • 1 (16 oz) can refried beans
  • 1 (10 oz) can red enchilada sauce
  • 2 cups shredded Colby Jack or Mexican blend cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped green onions
  • Vegetable oil for frying

Instructions

  1. Brown 1 lb ground beef in a large skillet over medium-high heat until fully cooked, about 5-7 minutes. Drain excess grease, add taco seasoning and 3/4 cup water, simmer according to package instructions until thickened. Set aside.
  2. Heat refried beans in microwave for 1 minute to soften. In a separate skillet, heat a thin layer of vegetable oil over medium heat. Fry tortillas one at a time on both sides until golden and crispy, 1-2 minutes per side. Drain on paper towels.
  3. Preheat oven to 400°F. On a baking sheet, layer 8 bottom tortillas: spread 2-3 tbsp refried beans on each, top with 1/8th of the beef mixture, then a second fried tortilla. Spread 1-2 tbsp enchilada sauce over the top tortilla, sprinkle with cheese, diced tomatoes, and green onions.
  4. Bake for 8-10 minutes until cheese is melted and bubbly. Slice and serve hot.

Notes

For crispier tortillas, fry them until deep golden brown. Customize with optional toppings like sliced black olives, sour cream, jalapeños, or cilantro. Use corn tortillas for a gluten-free version.
