For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 1/4 cup finely chopped pistachios
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/2 cup shelled pistachios, finely ground
- 1 cup white chocolate chips, melted
- 1/2 cup heavy cream
- Extra pistachios and white chocolate shavings for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Mix graham cracker crumbs, melted butter, and chopped pistachios. Press into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla, sour cream, and ground pistachios.
- Fold in melted white chocolate until fully incorporated. Pour mixture over the crust.
- Bake for 45-50 minutes until the center is almost set. Turn off the oven and let the cheesecake cool inside for 1 hour.
- Chill in the refrigerator for at least 4 hours or overnight.
- Before serving, whip heavy cream until stiff peaks form and spread over the cheesecake. Garnish with extra pistachios and white chocolate shavings.
