For the Crust:
- 1 1/2 cups rolled oats
- 1/2 cup whole wheat flour
- 1/4 cup honey
- 1/4 cup coconut oil, melted
- 1/4 cup chopped dried apricots
- 1/4 cup raisins
- 1/4 cup chopped walnuts
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 egg
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix oats, flour, cinnamon, and salt.
- In another bowl, whisk together honey, melted coconut oil, vanilla extract, and egg.
- Combine wet and dry ingredients, then fold in dried apricots, raisins, and walnuts.
- Drop spoonfuls of dough onto the baking sheet and flatten slightly.
- Bake for 12-15 minutes or until edges are golden. Let cool before serving.
