For the Crust:

  • 1 1/2 cups rolled oats
  • 1/2 cup whole wheat flour
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 1/4 cup chopped dried apricots
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 egg

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix oats, flour, cinnamon, and salt.
  3. In another bowl, whisk together honey, melted coconut oil, vanilla extract, and egg.
  4. Combine wet and dry ingredients, then fold in dried apricots, raisins, and walnuts.
  5. Drop spoonfuls of dough onto the baking sheet and flatten slightly.
  6. Bake for 12-15 minutes or until edges are golden. Let cool before serving.
