Healthy Oat Cookies With Dried Fruit & Nuts

A wholesome and delicious oat cookie packed with dried fruits and nuts for a nutritious snack.

For the Crust:

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 1/4 cup chopped dried apricots
  • 1/4 cup chopped dried cranberries
  • 1/4 cup chopped almonds
  • 1/4 cup chopped walnuts
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 egg

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix rolled oats, whole wheat flour, cinnamon, and salt.
  3. In another bowl, whisk together honey, melted coconut oil, vanilla extract, and egg.
  4. Combine wet and dry ingredients, then fold in dried apricots, cranberries, almonds, and walnuts.
  5. Drop tablespoon-sized portions of dough onto the baking sheet and flatten slightly.
  6. Bake for 12-15 minutes or until edges are golden. Let cool before serving.

Notes

You can customize the seasonings to taste.
