Hamburger Potato Casserole

A hearty and comforting casserole featuring layers of ground beef, potatoes, and cheese, baked with a creamy mushroom soup mixture for a satisfying family dinner.

  • 1 lb ground beef
  • 1 onion, chopped
  • 8 oz sliced cremini mushrooms
  • 3 cloves garlic, minced
  • 11 oz Campbell's Cream of Mushroom Soup (1 can)
  • 2 cups whole milk
  • 1 ½ teaspoons salt
  • 1 teaspoon pepper
  • 2 tablespoons chopped parsley
  • ½ teaspoon paprika
  • 3 lbs red potatoes, sliced to about ¼ inch thickness
  • 3 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F.
  2. Heat a skillet over medium-high heat. Add ground beef and onion, and stir-fry until beef is almost completely browned.
  3. Add mushrooms and continue to cook until beef is browned. Stir in garlic.
  4. Add cream of mushroom soup, milk, salt, pepper, and half of the parsley. Stir until fully combined.
  5. Add a layer of potatoes to the bottom of a 9×13 inch casserole dish.
  6. Ladle ⅓ of the ground beef mixture over potatoes, then sprinkle with 1 cup of cheese. Repeat twice (potatoes, meat mixture, cheese).
  7. Cover with foil and bake for about 55 minutes, until potatoes are fork tender.
  8. Remove from oven and let stand 10 minutes. Sprinkle with remaining parsley before serving.

Notes

This casserole is excellent for meal planning—double the batch for leftovers. Use russet potatoes if red potatoes are unavailable. For extra flavor, add a dash of Worcestershire sauce to the beef mixture.
