Ham and Cheese Hash Brown Casserole

A creamy and cheesy breakfast or dinner casserole featuring tender hashbrowns, diced ham, sharp cheddar cheese, sour cream, and a blend of savory spices baked until bubbly and golden.

  • 30 oz package shredded hashbrowns, thawed and drained
  • 1 cup diced thick-cut ham
  • 2 cups shredded sharp cheddar cheese, divided
  • 8 oz sour cream
  • 1/2 cup diced onion
  • 1/2 cup melted butter
  • 1/2 cup milk
  • 4 large eggs
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon garlic salt
  • 1/2 cup sliced green onions for garnish

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together eggs and milk until combined.
  3. Add hashbrowns, diced ham, 1.5 cups shredded cheddar cheese, sour cream, diced onion, melted butter, white pepper, and garlic salt. Stir to combine.
  4. Spread the mixture evenly into the prepared baking dish.
  5. Sprinkle the remaining 0.5 cup shredded cheddar cheese on top and cover with foil.
  6. Bake for 45 minutes until bubbly.
  7. Remove foil and bake for an additional 10-15 minutes to brown the cheese on top.
  8. Sprinkle with sliced green onions before serving.

Notes

1. The casserole can be made ahead and refrigerated before baking. 2. Use thick-cut ham or leftover ham for best flavor. 3. For extra crispiness, broil the casserole for 1-2 minutes at the end.
