Ingredients

Scale
  • 1 pound dried navy beans
  • 1 ham bone with some meat left on it
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 8 cups water
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Rinse and sort the navy beans, then soak them overnight in water.
  2. Drain the beans and place them in a large pot with the ham bone and 8 cups of water.
  3. Bring to a boil, then reduce heat and simmer for about 1 hour.
  4. Add the chopped onion, garlic, carrots, celery, thyme, and bay leaf to the pot.
  5. Continue to simmer for another 1 to 1.5 hours, or until beans are tender and soup is flavorful.
  6. Remove the ham bone, shred any remaining meat, and return it to the soup.
  7. Season with salt and pepper to taste before serving.

Notes

This soup is a great way to use leftover ham bones and can be customized with additional vegetables or spices. For a thicker soup, mash some beans against the side of the pot and stir.
