For the Crust:
1 lb ground turkey
2 medium sweet potatoes, diced
1 small onion, diced
2 cloves garlic, minced
1 tbsp olive oil
1 tsp paprika
1/2 tsp cumin
1/2 tsp salt
1/4 tsp black pepper
1/4 cup chicken broth
2 cups baby spinach
1/4 cup chopped fresh parsley
Instructions
1. Prepare the Crust:
Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook for 8-10 minutes, stirring occasionally, until slightly softened.
Add onion and garlic to the skillet. Cook for 2-3 minutes until fragrant.
Push vegetables to one side of the skillet. Add ground turkey and cook, breaking it apart with a spoon, until no longer pink (about 5-6 minutes).
Stir in paprika, cumin, salt, and pepper. Pour in chicken broth and simmer for 2 minutes.
Add baby spinach and cook just until wilted (about 1-2 minutes).
