Ground Turkey Sweet Potato Skillet – Quick, Healthy, and Delicious

For the Crust:

  • 1 lb ground turkey
  • 2 medium sweet potatoes, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chicken broth
  • 2 cups baby spinach
  • 1/4 cup chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook for 8-10 minutes, stirring occasionally, until slightly softened.
  2. Add onion and garlic to the skillet. Cook for 2-3 minutes until fragrant.
  3. Push vegetables to one side of the skillet. Add ground turkey and cook, breaking it apart with a spoon, until no longer pink (about 5-6 minutes).
  4. Stir in paprika, cumin, salt, and pepper. Pour in chicken broth and simmer for 2 minutes.
  5. Add baby spinach and cook just until wilted (about 1-2 minutes).
  6. Garnish with fresh parsley before serving.
