For the Crust:
- 1 lb ground beef
- 1 cup white rice, cooked
- 1 tbsp taco seasoning
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 avocado, sliced
- 1/2 cup shredded cheese
- 1/4 cup sour cream
- 1/4 cup salsa
- 1 lime, cut into wedges
- Fresh cilantro, chopped
Instructions
1. Prepare the Crust:
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add taco seasoning and 1/4 cup water to the beef. Simmer for 5 minutes until thickened.
- Divide cooked rice among bowls. Top with seasoned ground beef, black beans, and corn.
- Add avocado slices, shredded cheese, sour cream, and salsa.
- Garnish with fresh cilantro and serve with lime wedges.
