Grilled Shrimp Skewers with Garlic Butter Sauce

Tender grilled shrimp skewers marinated in a zesty blend and finished with a rich garlic butter sauce, perfect for quick weeknight meals or summer barbecues.

  • 1.5 pounds large shrimp, peeled and deveined
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Zest of 1 lemon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, finely minced
  • 2 tablespoons fresh parsley, chopped
  • Juice of 1/2 lemon

Instructions

  1. Whisk together olive oil, lemon juice, Dijon mustard, garlic powder, oregano, lemon zest, salt, and black pepper in a bowl. Add shrimp, toss to coat, and marinate for 30 minutes at room temperature or up to overnight in the fridge.
  2. Thread marinated shrimp onto skewers. Preheat grill to medium-high heat.
  3. Grill skewers for 2-3 minutes per side until shrimp are pink, opaque, and just cooked through.
  4. Meanwhile, melt butter in a saucepan, stir in minced garlic, parsley, lemon juice, salt, and pepper. Brush grilled shrimp with warm garlic butter sauce and serve immediately with lemon wedges.

Notes

Soak wooden skewers in water for 30 minutes to prevent burning. Do not overcook shrimp to keep them tender. Reserve extra garlic butter for dipping.
