Grilled Shrimp Skewers with Garlic Butter Sauce

Tender grilled shrimp skewers marinated in a savory blend and finished with a rich garlic butter sauce, bursting with herbaceous, garlicky flavor. Perfect for quick meals, salads, or grain bowls.

  • 1 to 1.5 pounds large shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Zest of 1 lemon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup unsalted butter, melted
  • 12 cloves garlic, finely minced
  • 1/4 cup fresh parsley, finely chopped
  • Juice of 1/2 lemon
  • Skewers (wooden soaked in water for 30 minutes or metal)

Instructions

  1. Whisk together olive oil, lemon juice, Dijon mustard, garlic powder, oregano, lemon zest, salt, and black pepper in a bowl. Add shrimp, toss to coat, and marinate for 30 minutes at room temperature or up to overnight in the fridge.
  2. Thread marinated shrimp onto skewers, leaving space between each for even cooking. Preheat grill to medium-high heat (350-400°F).
  3. Grill skewers for 3-5 minutes per side until shrimp are opaque, pink, and just cooked through.
  4. Meanwhile, melt butter and whisk with minced garlic, parsley, lemon juice, salt, and pepper to make garlic butter sauce. Brush warm sauce over grilled shrimp before serving.

Notes

Soak wooden skewers in water for 30 minutes to prevent burning. Use two parallel skewers to prevent shrimp from spinning. Prep garlic butter ahead and store in fridge for up to 2 days; reheat gently before using.
