Grilled Mozzarella BBQ Chicken Sandwiches

A delicious grilled sandwich featuring tender BBQ chicken, melted mozzarella cheese, and crusty bread, perfect for a quick and satisfying meal.

  • 1 tablespoon olive oil
  • 3 cups cooked, shredded chicken
  • 1/4 medium red onion, sliced
  • 1/2 cup BBQ sauce
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons unsalted butter, softened
  • 8 slices crusty Italian bread
  • 8 slices thick-cut mozzarella cheese

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add shredded chicken and sliced red onion. Cook until chicken is warmed through and onion has softened.
  3. Stir in BBQ sauce and cilantro. Mix well, then transfer to a bowl and set aside.
  4. Heat a skillet or griddle over medium heat.
  5. Spread one side of each slice of bread with softened butter.
  6. Place one slice of mozzarella cheese on the non-buttered side of four bread slices.
  7. Spoon 1/2 cup of the chicken mixture onto each cheese-topped slice.
  8. Place another slice of mozzarella cheese on top of the chicken.
  9. Top with the remaining bread slices, buttered side facing out.
  10. Cook sandwiches over medium heat for 3–4 minutes per side, or until golden brown and cheese is melted.
  11. Serve immediately.

Notes

For extra flavor, use smoked mozzarella. Add avocado slices for creaminess. Use your favorite BBQ sauce for a personalized touch.
