Easy Grilled Cheese Sloppy Joes

A quick and easy comfort food mashup combining savory sloppy joe filling with melty grilled cheese sandwiches, perfect for busy weeknights.

  • 1 pound ground beef
  • 1/2 yellow onion, chopped
  • 1 can (8 oz) tomato sauce
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard
  • Salt and freshly ground black pepper, to taste
  • 8 slices bread
  • Butter, softened (for spreading)
  • Cheese slices (cheddar, mozzarella, provolone, or a mix), 2 slices per sandwich

Instructions

  1. Brown the ground beef and chopped onion in a skillet over medium heat until fully cooked.
  2. Add tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, salt, and pepper to the skillet. Stir well to combine.
  3. Reduce heat to low, cover, and simmer for 10-15 minutes, stirring occasionally to prevent sticking and allow flavors to meld.
  4. Lightly butter one side of each bread slice. Place four slices butter-side down on a surface.
  5. On the unbuttered side of each slice, place two slices of cheese.
  6. Spoon the sloppy joe mixture evenly over the cheese layers.
  7. Top with the remaining bread slices, butter-side up.
  8. Cook sandwiches in a skillet or on a griddle over medium heat until bread is golden brown and cheese is melted, about 3-4 minutes per side.
