Easy Grilled Cheese Sloppy Joes

A quick and easy comfort food mashup combining savory sloppy joe filling with melty grilled cheese sandwiches, perfect for busy weeknights.

  • 1 lb ground beef
  • 1 can (8 oz) tomato sauce
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard
  • Salt and freshly ground black pepper, to taste
  • 8 slices bread
  • Butter, softened (for spreading)
  • 16 slices cheese (cheddar, mozzarella, provolone, or a mix)

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked; drain excess fat.
  2. Add tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, salt, and pepper to the skillet with the beef. Stir well to combine.
  3. Reduce heat to low, cover, and simmer for 10-15 minutes, stirring occasionally to prevent sticking and to meld flavors.
  4. Lightly butter one side of each bread slice. Place four slices butter-side down on a clean surface.
  5. On the unbuttered side of each slice, layer two slices of cheese.
  6. Spoon the sloppy joe mixture evenly over the cheese layers.
  7. Top with remaining cheese slices and place the remaining bread slices on top, butter-side up.
  8. Heat a skillet or griddle over medium heat and grill the sandwiches until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
  9. Serve immediately.

Simmering the sloppy joe mixture allows the flavors to meld and the sauce to thicken, which is key for a rich filling that won’t make the bread soggy. Use your favorite cheese or a blend for best flavor and melting quality.
