Green Beans Almondine

A classic French dish of green beans tossed with buttery toasted almonds, sautéed shallots, garlic, and bright citrus notes.

  • 1 pound trimmed green beans
  • 3 tablespoons unsalted butter
  • 1/4 cup sliced almonds
  • 1 large shallot, thinly sliced
  • 3 garlic cloves, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil. Add the green beans and cook until crisp-tender, about 4–5 minutes. Drain well and set aside.
  2. Heat a large skillet over medium heat. Add butter, allowing it to melt and brown slightly. Add almonds and toast, stirring frequently, until golden and fragrant, about 2–3 minutes.
  3. Add shallot and cook until tender, about 2 minutes. Stir in garlic and lemon zest, cooking until fragrant, about 30 seconds. Return green beans to the skillet, add lemon juice, salt, and pepper. Toss well and heat through for 1–2 minutes. Garnish with fresh parsley and serve hot.

Notes

Blanch the green beans just until crisp-tender to avoid overcooking. Toasted almonds add crunch and nuttiness. Adjust lemon juice for brightness or leave it out for a milder flavor.
