Ingredients

Scale
  • 1 lb 85/15 ground beef
  • 1 lb ground pork
  • 1/4 cup finely diced red onion
  • 4 cloves garlic, minced
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh dill
  • 1 tbsp chopped fresh mint
  • 2 tsp salt
  • 1/2 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1 tsp red pepper flakes
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 2 cups plain Greek yogurt
  • 1 cup grated cucumber, drained
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced (for tzatziki)
  • 1 tbsp fresh dill, chopped (for tzatziki)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • Cooked rice or couscous for base

Instructions

  1. Preheat oven to 425°F. In a large bowl, combine ground beef, ground pork, diced red onion, minced garlic, fresh parsley, dill, mint, salt, cumin, oregano, red pepper flakes, and black pepper. Mix with hands until well combined.
  2. Form mixture into 1.5-inch meatballs using a cookie scoop. Place on a sheet pan drizzled with 1 tbsp olive oil. Bake for 20-25 minutes until cooked through and golden.
  3. While meatballs bake, prepare tzatziki: mix Greek yogurt, grated drained cucumber, 2 tbsp lemon juice, 2 minced garlic cloves, 1 tbsp chopped dill, salt, and pepper. Chill.
  4. Prepare fresh veggies: combine halved cherry tomatoes, diced cucumber, sliced red onion, and crumbled feta. Toss with a drizzle of olive oil and lemon juice.
  5. Assemble bowls: add cooked rice or couscous base, top with meatballs, tzatziki sauce, and fresh veggie mix. Garnish with extra herbs if desired.

Notes

Use a mix of beef and pork for juicy meatballs; drain cucumber well for thick tzatziki. Make ahead: meatballs freeze well. Serve with pita for extra authenticity.
