For the Chicken:

  • 2 lbs of chicken (tenders, thighs, or breast work well)
  • 2 tbsp olive oil

For the Garlic Parmesan Butter Sauce:

  • 1 stick butter
  • 810 cloves garlic, minced
  • 1/2 cup parmesan, grated
  • 1 tbsp hot sauce (adjust based on your preference)
  • 2 tsp red pepper flakes
  • 1/3 cup fresh parsley, minced

Chicken Seasonings:

  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

Prep and Skewer Chicken:

  1. Soak your wooden skewers in water for at least 30 minutes to prevent them from burning during cooking.
  2. Mix the seasonings (paprika, garlic powder, onion powder, salt, and pepper) in a small bowl.
  3. Cut the chicken into 3-inch pieces, then toss them in olive oil and the prepared seasoning mix.
  4. Thread the chicken onto the soaked skewers, packing them tightly with no space in between.

Making the Garlic Parmesan Butter Sauce:

  1. Melt the butter in a small pan over medium heat, then add the minced garlic.
  2. Once the garlic is fragrant and the butter has partially melted, add the red pepper flakes, hot sauce, and parsley, whisking to combine.
  3. Stir in the grated parmesan until the sauce is smooth and fully combined.

Cooking the Chicken:

  1. Preheat your air fryer to 400 degrees Fahrenheit.
  2. Cook the skewers for 5 minutes, then flip them.
  3. Baste the skewers with the garlic parmesan butter sauce, then cook for an additional 2 minutes.
  4. Flip and baste again, and finish cooking until the internal temperature of the chicken reaches 165 degrees Fahrenheit, which should take about 5-6 more minutes.

Serving Suggestions

Serve these flavorful skewers hot off the air fryer, garnished with a sprinkle of fresh parsley and extra parmesan if desired. They pair beautifully with a side of light salad, some roasted vegetables, or even over a bed of creamy mashed potatoes for a more filling meal.
