Garlic Herb Chicken Thighs

Juicy, flavorful chicken thighs marinated in a garlic and herb mixture, then roasted to perfection. This easy recipe is perfect for weeknight dinners and pairs well with a variety of sides.

  • 6 bone-in, skin-on chicken thighs
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 lemon, juiced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix together olive oil, minced garlic, rosemary, thyme, salt, black pepper, paprika, red pepper flakes (if using), and lemon juice.
  3. Place chicken thighs in a large bowl or zip-top bag. Pour the marinade over the chicken, making sure each piece is well coated. Let marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  4. Arrange chicken thighs skin-side up in a baking dish or on a rimmed baking sheet. Pour any remaining marinade over the top.
  5. Roast in the preheated oven for 35–40 minutes, or until the chicken is golden brown and the internal temperature reaches 165°F (74°C).
  6. Let rest for 5 minutes before serving.

Notes

For extra crispy skin, broil the chicken for the last 2–3 minutes of cooking. If you don’t have fresh herbs, you can substitute 1 teaspoon each of dried rosemary and thyme. Serve with roasted vegetables or a fresh salad for a complete meal.
