Garlic Butter Shrimp Scampi

A quick and delicious Italian-American dish featuring succulent shrimp in a rich garlic butter sauce with white wine, lemon juice, and herbs. Perfect served over pasta for a satisfying dinner.

  • 1 1/2 lbs large or extra large shrimp, shelled and deveined
  • 2 TBS butter
  • 2 TBS extra virgin olive oil
  • 4 cloves garlic, minced
  • 1/2 C dry white wine or broth
  • 1/3 C parsley, chopped
  • Squeeze of 1/2 fresh lemon
  • Pinch crushed red pepper flakes
  • Kosher salt and cracked black pepper, to taste

Instructions

  1. Prepare Mrs. Miller’s Lemon Pepper Noodles according to package instructions.
  2. Melt butter with the extra virgin olive oil in a large skillet over medium heat.
  3. Add garlic and sauté until fragrant, about 1 minute.
  4. Add wine or broth, red pepper flakes, salt, and pepper to taste. Bring to a simmer and let reduce by half, about 2 minutes.
  5. Add shrimp to the pan and sauté until they just turn pink, 2 to 4 minutes depending on size.
  6. Stir in parsley and fresh lemon juice.
  7. Serve hot over prepared noodles.

Notes

Do not overcook the shrimp to keep them tender. For a richer flavor, use dry white wine instead of broth. Adjust red pepper flakes to taste for desired heat.
