Garlic Bread Grilled Cheese

A grilled cheese sandwich made with bread coated in a roasted garlic butter featuring parmesan and fresh herbs, filled with melted fontina cheese, creating a toasty, golden, crunchy, buttery, and melt-in-your-mouth delicious sandwich.

  • 2 whole heads of garlic
  • 6 tablespoons unsalted butter
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon chopped fresh herbs (such as parsley, basil, rosemary)
  • Kosher salt
  • 4 slices sourdough bread
  • 6 ounces fontina cheese, freshly grated
  • Olive oil for drizzling

Instructions

  1. Preheat oven to roast the garlic: slice the top off the heads of garlic, drizzle with olive oil, wrap in foil, and roast until soft and golden.
  2. Once garlic is cool enough to handle, squeeze the cloves out onto a plate.
  3. In a bowl, combine the roasted garlic cloves with softened butter, parmesan cheese, chopped fresh herbs, and a pinch of kosher salt. Mash together with a fork until well combined to make garlic butter.
  4. Spread the garlic butter on the outside of all bread slices.
  5. Heat a large skillet or griddle over medium-low heat.
  6. Place two slices of the buttered bread, butter-side down, in the skillet. Top with grated fontina cheese, then cover with the remaining bread slices, butter-side up.
  7. Cook slowly over medium-low heat until the bottom bread is golden and toasty and the cheese has melted, then flip and cook the other side until golden as well.
  8. Remove from heat, optionally sprinkle with extra parmesan and fresh herbs, then slice and serve.

Notes

Use low to medium-low heat and cook slowly to ensure full cheese melt and to prevent burning the bread. Fresh herbs can be adjusted to taste for added flavor. This sandwich is rich and buttery, so it’s not suitable for low-fat diets.
