Roasted Garlic Bharta

Flavorful Indian roasted garlic mash, perfect as a side dish with bread or rice.

Ingredients

  • 2 whole garlic bulbs (roasted)
  • 1 medium onion (finely chopped)
  • 2 tbsp mustard oil
  • 1 tsp salt
  • 1/2 tsp red chili powder
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 2 tbsp fresh coriander (chopped)
  • 1 green chili (chopped)
  • 1 tsp lemon juice

Instructions

  1. Roast the garlic bulbs on a flame, grill, or in an oven until soft and aromatic.
  2. Peel the roasted garlic cloves and mash them thoroughly.
  3. Heat mustard oil in a pan, add chopped onion, green chili, and sauté until golden.
  4. Add mashed garlic, salt, red chili powder, cumin powder, and coriander powder. Mix well.
  5. Cook on low heat for 2–3 minutes, stirring occasionally.
  6. Turn off heat, add chopped coriander and lemon juice. Mix well and serve.

Notes

For best flavor, roast garlic until it becomes tender and slightly charred. Adjust chili and lemon to taste. Serve with hot roti or as a sandwich spread.
